Flat pancakes are sooo passe. Step into the world of Jim's Pancakes, where the fluffy breakfast classic can become anything you dream, whether it's a 3-D dinosaur, princess or football field!
Jim Belosic, author of "OMG Pancakes," was taken by surprise at first by the popularity of his website, Jim's Pancakes. He created it as a way to show family and co-workers the elaborate creations he made for his daughter, but after two months the server began to crash — his site was getting over a million visits.
An advertising and marketing specialist, Jim was inspired to make breakfast fun for his kids by his own dad, who used to make him Mickey pancakes as a child. Though they never turned out quite right, his father came up with creative alternatives for the mistakes, claiming they were hot air balloons and such. So when Jim's daughter Allie was 2 and a half years old, he thought it was time to give it a try.
"I got up, made Mickeys and she was less than impressed! I realized Mickey was all we had when I was little but now she has 'Dora the Explorer' and princesses and other stuff," Jim told TODAY.com. Allie's "who cares?" response got Jim's creativity cooking. First stop? Princess pancakes.
After the princess came the poodle. Since then, his repertoire has expanded and his breakfast treats have become a father-daughter tradition and internet sensation.
"I'm a closet mechanical engineer, so I love making pancakes like the Ferris wheel and bridge. I recently made the Eiffel Tower," Jim said. Those 3-D feats of engineering tend to bore his daughter, who prefers unicorns and the like, and even helps out by designing dresses for her princesses.

So what's next? Jim vows to perfect a 3-D roller coaster pancake that didn't turn out quite as planned. And he has his sights set on a world record.
"I Googled the record for tallest stack of pancakes and it seems easily broken," Jim said. "At some point I'll go for that. It's on my bucket list to have a Guinness book record." The tallest stack record-holder is the Food Network UK, at 725.

Jim's tips:
- Use a lower griddle temperature than normal. It may take longer but if you cook it at a lower heat it won't burn and discolor.
- Use squeeze bottles for batter. It's a great tool to draw with. You can use a restaurant squeeze bottle or an old ketchup bottle to draw the shapes.
